Asian Chilli Crab

Chilli Crab
(Hungry quote: I love eating crabs, but I hate to kill it with my own hands. Guilt)



Ingredients:

1kg Live Sri Lankan Crab
2-3 tsp Shrimp Paste
A few slices of Old Ginger
2 tsp Fish Sauce
4-5 tbs Tomato Sauce 
1 Egg (with or without yolk is fine)
2 tsp White Vinegar
4-5 tsp Sugar
Salt to taste

Rich Chilli Sauce:

4 Red Chilli
4-6 Chilli padi (increase spiciness)
8 cloves Garlic
1-2 Onion (Big, white one)

Put everything into blender and blend for 30 sec to get a nice smooth form of chilli paste.

Killing Tips: 

Put the live crab into the freezer. Remove only after 45 min. And it’s the most humane way to kill it without getting snapped by the strong claws. Clean it. Remove claws and trim the legs. Cut into 4 pieces and clean it thoroughly again with a brush.

Steps:

-          Heat up the wok with oil (about 4tsp)
-          Add the blended chilli paste and shrimp paste; stir for a min
-          Add the sliced ginger; stir-fry for a few min
-          Add water (about 1 cup)
-          Time to put in the crabs!
-          Add tomato sauce, vinegar, sugar, salt and fish sauce
-          Mix them well and cover the wok
-          Simmer for about 5 -7 min
-          Next gently pour the egg to get a good spicy eggy mix

Optional

-          Add some Chinese wine (Hua Qiao)
-          Add Cherry Tomatoes

Lastly, garnish with some coriander leaves.
